Latin Cuisine

This is a category that will probably be the most fluent of all the cuisines I will cover in the Whisk Warriors series. I was a Chef for a company in Atlanta known as Fifth Group for many years early in my career. I found myself at one point at the helm of what would become the top regional Mexican restaurant in Atlanta. As awarded by Creative Loafing in 2007. Additionally I had the pleasure of studying under one of America’s best home bred Chef’s. A man who helped to pioneer modern Mexican in America. One Jeff Smedstat. I was also married into a Mexican family for many years. My daughter Margarita (Margaret) is a product of that former union.

I have been across much of Mexico by bus, And have been to almost as many states in Mexico as I have states in the US. Lets just say my relationship with Latin cuisine, and specifically Mexican cuisine has some history. I learned in my early days of dipping toes into the Latin cuisine pond. To just throw out everything on technique and tradition I qas taught in both culinary school and contemporary restaurants. What has evolved after all these years is an understanding of Latin cuisine that is both approachable and simple in execution, while tremendous in both flavor and presentation.
