This section is simply a labor of love. My mother was diagnosed with a very severe case of celiac disease many, many years ago. To say specifically why I chose to pursue a career in food, one would not be wrong, at least in part, to think that diagnoses had some weight in my decision. And more than just the peripheral aspects of wanting to try different foods, as our table growing up was often bland and tasteles.It wasn’t for my mother’s lack of trying, it was just very difficult for her to prepare a diet that was in anyway common to the times. What eventually developed was a very bland simple menu, that she knew she could eat without dire consequences.
This simple diet was in many ways the fuel for my drive to expand my culinary horizons. But part of it was also the desire to help create and discover a bigger world for my mother to enjoy. I have devoted many hours to many experiments in trial and error, and my mother as well, to produce what I think is one of the best set of go-to dishes to satisfy all the desires of a gluten free diet. From mac and cheese to chocolate cake. There are very few doors we haven’t opened. So here we will share what we have learned on our journey to help my mother live a quality gluten free life.
